Cook with me - Lamb in red wine and vegetables.

Ok so before I commence this post properly, I just want to say this recipe was a first for me, I never cook anything new and thought I'd give it a go and photograph it as I went .. and then decided if it ended up successful I'd share it with you guys! It is with Lamb in this recipe because Simon had never really tried lamb before and I wanted him to give it a shot, but you could obviously use different meats if you would prefer. 

- 4 Lamb Chops (recommend these as I used cutlets) or Lamb cutlets
- Large handful of Mushrooms
- 2 tomatos 
- 1 Large onion
- 1 Leek
- 2 large potatos
- 1 segment of garlic
- 300ml red wine
- 1 pint of chicken stock
- butter and milk for the mashed potatos 
- Salt & Pepper 


1. Preheat your oven to 200 degrees. 

2. Using a frying pan, fry off the lamb cutlets until brown and then turn off the heat and allow to cool. 

3. Cut up your tomatoes, onion, mushrooms, leek and garlic and place in an oven proof dish with a sprinkling of oil. Then cover with some tin foil and place in the oven for 5 minutes.

4. Take the tray of vegetables out of the oven and place the 4 lamb cutlets into it, spread out evenly. Following this pour in the 300ml red wine and 1 pint of chicken stock. Season with salt and pepper. Recover the dish with tin foil and place in the oven for a further 50 minutes. 

5. Whilst the lamb is cooking in the oven, peel and chop your potatoes and boil for 30 minutes until soft. Ready for mashing. Mash them to your personal preference (I use milk and butter). 

6. After 50 minutes take your lamb out of the oven. Serve up the portions of mashed potato onto each of the plates. Following this serve up some of the lamb with vegetables and some of the red wine sauce. VoilĂ ! 

What I particularly enjoyed about this dish was how unreal the vegetables tasted! They tasted very Mediterranean because of the way the tomatoes were infused with the red wine! I will definitely be making it again and experimenting with different meats! My only change I would make would be I would probables try lamb chops instead of cutlets!
