Cook with me: Carbonara














Again Guys, in no way is this me claiming I'm a chef or even a food blogger for that matter, Im not.. this is just an element of the lifestyle side of my blog which went suprisingly well and I thought I would share it with you! Ok, firstly Im going to embarrass my boyfriend by telling you all about how he has made me his own take on Carbonara for over a year now, and everytime it would be absolutely appalling, and he would try to alter his recipe but somehow it just seemed to get worse but in a different way each time. Once it came out grey, once he used bacon (which just did not taste right), once he scrambled the egg.. and then the list goes on. So then, when he suggested I cook it, I was a little bit nervous but also up for the challenge because I simply could not deliver the mess on the plate which he had given me on several occasions (God loves a trier though Slimmy, and I do appreciate the many attempts). Anyway, much to his disgust, unhappiness and embarrassment but also excitement.. my carbonara turned out to be an absolute dream and was incredible.. first time!! Ingredients:

- Enough spaghetti for 2 people. 
- 100g of pancetta
- 50g mature cheddar cheese (for cooking) and another 50g for on top of pasta
- 3 Large eggs
- 50g unsalted butter
- Salt and Pepper
- Mixed Herbs
- 200ml double cream (personal preference to use this)

Recipe

1. Boil water in a large pan and place the spaghetti in to the ban with a dash of salt. Whilst the spaghetti is cooking, cut the pancetti if it is not already chopped. Break the 3 eggs into a bowel or pyrex jug and whisk. Add some black pepper to season and then set aside. 

2. While the spaghetti is cooking, fry the pancetta in the 50g of butter until golden and crispy. Then turn the hob down to low and leave the pancetta on top. 

3. When the pasta is ready fork this into the frying pan with the pancetta (It doesn't matter if some hot water gets into the pan of pancetta). 

4. Mix the first 50g of cheese into the egg mixture. Take the frying pan off the heat and add in the egg mixture to the pancetta and pasta. Ensuring to mix using a fork to life the pasta into the mixture ensuring that it is all covered. Place back onto the hob on a very low heat and continue to life the pasta until the mixture thickens slightly. 

5. This is now the point where I added the cream. Pour in a small amount of the cream and mix into the spaghetti thoroughly. Continue to add to your own preference. I know I like mine very creamy so I continued until the full 200ml had gone. Ensure that the mixture does not scramble but it needs to thicken up into a creamy sauce. Continue to life until its thick enough to serve. Add some mixed herbs, pepper and salt ( to your own preference ). 

6. Take off the heat once thick enough and serve. It will thicken slightly more when it is set on the plate. Add some extra cheese on top if you like ( Im a massive cheese fan so I added a good handful to each plate ). Enjoy!!

I honestly cannot tell you how nice this tasted!! I already cannot wait to cook it again! Let me know if you decide to recreate this!! I thought I would not be a fan of my own carbonara because I love it so much and used to resteraunt standard, so I thought I would probablies be a huge critic of my own.. but honestly WOW it was incredible!!
